Am I a little late to the Russian Piping Tip trend? Maybe! Did that in any way diminish my enthusiasm to test these guys out? NOPE! Today we’re not only testing out these newfangled devices BUT ALSO making a delish giant chocolate cupcake perfect for transforming into a flower basket! Enjoy!!
Giant Chocolate Cupcake
Ingredients
- 1 3/4cups flour
- 2cups sugar
- 3/4cup cocoa powder
- 2tsp baking soda
- 1tsp baking powder
- 1tsp salt
- 3 eggs, room temperature
- 1cup strong black coffee(or 1 heaping tablespoon espresso powder dissolved in 1 cup water)
- 1cup buttermilk (or 1 cup milk + 1 T white vinegar – let stand 5 minutes)
- 1/2cup vegetable oil
- 1tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F. Grease giant cupcake pan with cooking spray.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, combine the eggs, buttermilk, vegetable oil, and vanilla extract. Add the wet ingredients to the dry and combine. Stir in the coffee. Batter will be thin.
- Divide batter between the two pans, then bake for 55-60 min.
